Big Stoater was a no brainer for us at the roastery. It predominantly offers chocolate, hazelnuts and big whafts of caramel. There are also deeper complex layers of white peach and praline in this Yellow Catuai from Fazenda Cachoeira.

You are ludicrously aware of Wee Stoater but this is the vintage version. Champagne’s blanc de noirs of coffee.
Something with a little extra terroir and a single variety of arabica. If you inspect the beans you’ll notice that they are very uniform in shape and size. That’s because they are all from the same variety of arabica coffee tree - yellow catuai.
Yellow catuai is a dwarf variety of plant. In fact, it’s distinguishing characteristic is how short it is. This high yielding plant is a cross mutation of Yellow Caturra & Mundo Novo. It grows superbly at lower elevations.
In the crease of the coffee bean there is a little dark section. During the drying process some of the fermented sugars in the coffee bean have clung to the exterior. Although we always roast a light style this is typical in Brazilian yellow catuai.
