We have delivered another assault of our Insanely Pure Aromatics (IPA) range for the forthcoming festive season. A rockin' rollercoaster from Ethiopia. We tasted and procured this coffee from the Yirgacheffe, which has a more festive taste and aromatic profile. It’s a little deeper and sweeter almost like raisins saturated in Drambuie. Ethiopian coffee is normally redolent of hyper florals but this beauty has a condensed Kola Cube syrupy attitude and soft pomelo sweet grapefruit notes to balance it out. Outrageously moreish and intersonic as a filter preparation or an ultra-sweet espresso.

The Full Story
This is an Ethiopian classic washed coffee with a built in premium that allows farmers to build wells in producer villages. This either improves or provides access to clean water and is currently from Idido village - where we purchase the coffee. Cherries are harvested and picked individually by hand. Pickers rotate among trees every eight to ten days, choosing only the cherries that are a deep red colour. A maxim of ensuring coffee quality. Coffee cherries are sorted by immersion in water. Bad or unripe fruit will float and the good ripe fruit will sink. The skin of the cherry and some of the pulp is removed and the remainder is fermented in tanks and washed to leave a clean bean. Beans are then sundried on raised beds.
