The Full Story
This coffee comes from Karana, a coffee-producing organization in the region of Kintamani. Karana is a collaboration between two coffee professionals who have a passion for fostering excellent coffee out of Bali. Their goal is to utilise their strengths to develop the best possible coffee flavors by being radical in their processing at a farm level. Notably, you will find this is a natural processed coffee - whole cherries are dried in the sun after sorting and then hulled. This yields the slightly fermented sake note found in the cup. Rather than being overtly boozy, as often found in naturals, this Balinese microlot exhibits clean fermentation esters.
